Ingredients
  • 2 cans black beans, drained
  • 1 can corn, drained
  • 2 large tomatoes, diced
  • 2 avocados, diced
  • ½ red onion, diced
  • ¼ cup fresh cilantro, finely chopped
  • 2 fresh jalapenos, diced
  • DRESSING
  • 1 tablespoon red wine vinegar
  • 3- 4 tablespoons lime juice (1 lime)
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 2 tablespoons olive oil
Instructions
  1. Combine all ingredients and mix gently to coat.
  2. Serve with tortilla chips.

This tastes so good and minus the tortilla chips is also very good for you. Can also be eaten as a salad or in lettuce leaves.

Ingredients
  • ½ cup Earth Balance vegan margarine or coconut oil
  • 1 cup brown sugar
  • ¼ cup almond milk
  • 1 tablespoon vanilla extract
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup *vegan chocolate chips
Instructions
  1. Pre-heat oven to 350 degrees
  2. Cream together the Earth Balance and brown sugar, then add the almond milk and vanilla.
  3. In a separate bowl mix the flour, baking soda, baking powder and salt.
  4. Combine the wet & dry ingredients, then fold in the chocolate chips
  5. Roll into tablespoon sized balls and place them on an ungreased cookie sheet, then flatten them out a bit with your palm.
  6. Bake for 7-10 minutes.

Maple-Walnut Vinaigrette

Maple-Walnut Vinaigrette

Sweet, tangy, and delicious! Homemade salad dressing tastes so much better than store bought.

Maple-Walnut Vinaigrette Salad Dressing
 
Ingredients
  • ½ cup pure maple syrup
  • ¼ cup cider vinegar
  • ½ cup walnuts
  • 1 teaspoon dry mustard or 1 tablespoon prepared mustard
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ⅛ teaspoon garlic powder
  • 4 tablespoons olive oil
Instructions
  1. In a food processor or blender combine all of the ingredients except the olive oil and process until smooth. Run food processor or blender while drizzling the olive oil into it to emulsify. This salad dressing will thicken after refrigeration. Thin with water if desired.
